This exquisite culinary odyssey will feature the prowess of Michelin-starred chefs from the luxury Nusa Dua resort, including special collaborations with Chef Romuald Fassenet – a Meilleur Ouvrier de France (MOF 2004) and Michelin-starred chef.
Chef Romuald Fassenet’s culinary career started in Matignon, France, taking him to the United States and Germany, where he honed his skills under the guidance of Michelin-starred Chef Jean-Paul Jeunet. Renowned for his unwavering pursuit of perfection, Chef Romuald, along with his wife Catherine who owns Le Château du Mont-Joly and Bouchon Le Grévy, has contributed significantly to the sophisticated culinary landscape. His dishes embody creativity, delicacy and wonder, presenting signature contrasts like sweet meeting sour, smoky intertwined with iodine, and vegetal complementing woody notes.
The ‘Celebration of the Culinary Arts’ commences with an extraordinary Sunday Brunch at Pala Restaurant, a collaboration between Chef Romuald and Chef Jean-Yves Leuranguer (MOF 1996), on Sunday, 4 February 2024.
Following this flavoursome brunch experience, The Apurva Kempinski Bali’s talented French Michelin-starred Executive Chef, Jean-Baptiste Natali of Koral Restaurant, will join forces with Chef Romuald to infuse Bali’s unique aquarium restaurant with culinary excellence. They will delight guests with a specially crafted 5-course set menu on Thursday, 8 February 2024.
Chef Romuald Fassenet’s sweet and savoury creations will then take centre stage during Selasar Deli’s artisanal afternoon tea, as a sweet finale to this tasteful culinary celebration. This delightful experience will be available on the 9th and 10th of February 2024.
