Syrco BASÈ, Culinary Hub Brilliance by Two Michelin-Starred Chef Syrco Bakker Flourishes in Ubud

Making a bold statement in Indonesia’s dining evolution, two Michelin-starred Chef Syrco Bakker, recently unveiled a pioneering culinary hub on the 21st January 2024. The immersive Syrco BASÈ restaurant pays homage to Indonesia’s ripe produce, culinary traditions, artisans, farmers, and fishers, alongside Chef Syrco’s Indonesian roots, across five key areas of gastronomy.

Featuring a diverse team of culinary professionals, sommeliers, mixologists, architects, artists and designers, this marks the inaugural occasion of a two-starred chef launching a restaurant in the archipelago. The property itself reflects Chef Syrco’s meticulous precision and experimental passion.

At the entrance of the restaurant stands a sacred banyan fig tree, revered by Balinese Hindus. It is embraced by a towering mosaic decorated with the diamond motif Rangrang – a ceremonial cloth originating from Nusa Penida island. The serene expanse of the restaurant’s exceptional garden is abundant with native vegetables, herbs, aromatics, and edible flowers. Serving both as an educational resource for guests and the culinary team, the garden adds a unique touch to the usual dining experience in Ubud.

Syrco BASÈ spans two levels, displaying an elegant blend of nature and culinary artistry. With terracotta walls, wood panelling and locally woven soft furnishings, the ambience exudes warmth, featuring generously spaced tables accommodating up to 50 people. Enhancing the remarkable experience, the restaurant servers will share their knowledge about each dish – or ‘moment,’ as the culinary team refers to them – and beverages, aligning with Chef Syrco’s principles of traceability, nature, and transparency.

At Syrco BASÈ, sustainability is not the only sole focus. Chef Syrco and his team actively engage in a dialogue with local suppliers to ensure that every step in the supply chain reflects the principles of fairness, integrity and respect.

Syrco BASÈ offers menus with three unique concepts, with seasonal updates every three months. Alcoholic and 0% pairings have been curated to highlight the region’s most exceptional beverages. Additionally, sommelier Noa Tanghee, who has worked with Chef Syrco at Pure C in the Netherlands, will oversee the fine wine pairing.

The PURE LOCAL menu transforms the island’s finest ingredients into eight culinary presentations of colour, structure, flavour and texture. Guests will discover the reasons behind Chef Syrco’s attainment of a second Michelin star for Pure C, the restaurant he led as Head Chef for 13 years. An example is the third moment, FLAMETAIL, resembling a gleaming coral garden with snapper tataki, seaweed fronds, algae and fuchsia segments of radish, complemented by a surprising passion fruit-infused shoyu.

Meanwhile, the HERITAGE menu highlights the diversity of Indonesia’s native ingredients, regional cuisines, and beloved dishes. Indulge in the third delight of Bali Salad, a plate offering a satisfying crunch of Urap (steamed vegetables with a coconut dressing) and a playful tribute to Indonesia’s all-time favourite, Nasi Goreng!

For the final moments of each menu, guests will transition to the upstairs lounge, featuring classic rattan furnishings beneath a high ceiling which celebrates the growth rings in the trunk of an ancient tree – a life-giving tree metaphor extending to Syrco BASÈ Ku. Overlooking the softly illuminated garden, this special stage serves as Chef Syrco’s flagship playground, where he crafts an exclusive culinary journey for a maximum of 14 guests.

Finally, the BAR at Syrco BASÈ overlooks an emerald rice field, providing seating for 20 guests surrounding the central bar and live kitchen area, where a captivating theatre of culinary and mixology skills unfold. Additionally, The Shop offers an array of products, ceramics, soft furnishings and artworks used throughout the venues, showcasing the venues deep connection with local communities and artisans.
