Uma Cucina at COMO Uma Ubud presents “Symphony of the Mediterranean: a Six-Course Gastronomic Soirée at Uma Cucina,” partnering for the first time with Animale Restaurant Jakarta. Special Guest Chef Andri Dionysius, the Chef Patron of MDA Restaurants, will lead this exclusive event scheduled on 7 – 9 November 2023.
It was the lush landscapes of Ubud and the vibrant flavours of Mediterranean cuisine that served as the inspiration for this unique culinary collaboration. Merging Uma Cucina’s Italian-inspired ambience with Animale Restaurant Jakarta’s avant-garde dining approach, guests will be exposed to an exquisite fusion of flavours.

Guiding the culinary revolution at MDA Restaurants, Chef Andri has redefined Jakarta’s dining scene through innovative concepts that go beyond the traditional boundaries of gastronomy. His transformative journey has led to the creation of iconic Animale, where American cuisine harmoniously dances with Mediterranean influences. At the event, he will showcase his tantalising creations, from hors d’oeuvres to delectable desserts.
The event’s highlights include Chef Andri’s Mediterranean dishes with creative fusions. Guests will start with a snack trio of Foie gras, Frog Legs, and Clam, followed by a delightful appetizer, Beetroot & Goat. The gastronomic adventure continues with main courses like Mallo + Marrow (Grilled kinmedai, Sardinian Malloredus, Roasted Bone Marrow), “Tur-Duc-En” (all’assassina pasta, turkey, duck, chicken, straciatella), and Tail + Tail (Wagyu chuck tail, Pistachio Hummus, Baharat Jus, Oxtail Shawarma, Tzatziki, Zhoug, Pita). To sweeten the experience, the renowned Oops cheese tart (Camembert, Malto D’Orzo Cheese) will take the spotlight.
