Although known for local dishes that would usually incorporate meat as its hero dish, Bali’s culture also thrives in cuisine that is extremely vegan-friendly, which makes this island definitely suitable for those who follow a strict no-meat diet.

The Laguna, A Luxury Collection Resort & Spa, Nusa Dua, Bali wanted to highlight their support of the plant-based movement in celebration of World Vegan Day in line with Marriott Internationals’ ‘Serve 360: Doing good in every direction; initiative.
To raise awareness to this eventful day, The Laguna has taken it up a notch, kicking off the day with an exclusive plant-based area for its breakfast at the Banyubiru restaurant with plant-based dishes from Asian vermicelli fried noodles, kimchi banh mi to sweet potato hash browns. The line of baked goods ranging of muffins and cookies, to name a few, were freshly baked all with vegan ingredients.
The de Balé Lounge and Bar and Cornerstone Deli stood out with herbal vegan drinks like Jamu Kunyit Asem as its headliner. One of Laguna’s local chefs, Chef Ketut Nyamprut, who just came fresh from a competition where he achieved Gold for his plant-based dishes, boasted the newest highlight of the menu: the Plant-based Nasi Bali which features young papaya soup, sate tempeh and coconut, perkadel jagung, lawar kadang and nangka, pepes jamur, sambal matah and corn rice.
This was served accompanied along with other plant-based plates available at the Arwana Restaurant for guests to enjoy for the day.

The Laguna’s lineup of restaurants with its exquisite menus is led by the recently appointed Director of Culinary, Chef Alexander Chong, a Malaysian native who carries over 26 years of experience in the culinary industry shares, “Leading the culinary team at The Laguna, it is of the utmost importance to me that we develop our young talents, as well as give back to our local communities. It is my social responsibility as a chef to develop menus that prioritise sourcing from local artisans, and organic food supplies.”
The enthusiasm Chef Alexander Chong has poured onto his entire team which was proven in September 2022 when the resort participated at the 11th Salon Culinaire Bali hosted by Bali Culinary Professionals where they bagged 4 Gold 1 Silver, 4 Bronze, 2 Diploma, The Best Individual Western Chef Award 2022, and The Best Culinary Organizations Team 2022 that consisted of Marriot Young Culinary Associates and Interns. At this event, Chef Ketut Nyamprut’s dishes were a Trio of Plant-Based Rolls and Stuffed Mushrooms Zucchini, Medley Vegetables, Vegan Curry Sauce, he received Gold in the competition.
