The name ‘di Mare’ translates to ‘of the ocean,’ a concept echoed in the restaurant’s interior design. Gracefully arched steel tubing and a sail-inspired roof come together to create an enchanting canopy. di Mare is led by the remarkable Senior Executive Chef-SEAP Joseph Antonishek. Trained at the esteemed Culinary Institute of America and mentored by iconic chefs like Jean-Georges Vongerichten, Charlie Palmer, and Wolfgang Puck, Chef Antonishek is a culinary maestro. He infuses Mediterranean and Indonesian flavours with his creative touch, turning each dish at di Mare into a masterpiece.
Our pick from the menu is to indulge in their new 6-7 course tasting experience, from appetizers to desserts. The menus offer a range of choices, featuring Japanese seafood, top-quality Australian meats, local produce, and options for vegetarians and vegans, catering to diverse tastes.
The restaurant’s highlights include tantalizing starters like Miyazaki A5 first course made from premium Japanese Wagyu beef paired with sunchoke and pickled hon shimeji mushrooms, as well as the Octopus appetizer, served with caramelized cauliflower, local pakis leaves, green apple and coriander, topped by squid ink.
For the main course, savour the Ayam Cemani Agnolotti made with the rare Javanese Cemani black chicken breed, and served with mascarpone, truffle, and candlenut foam. Meanwhile, you can get the taste of local ingredients in the Australian lamb loin served with ubi gnocchi, glazed root vegetables and kluwek nut demi-glace.
Complementing the elevated cuisine is an extensive wine cellar with nearly 1,000 bottles served via the Enomatic system, allowing for perfect pairings.
